Details:
Clostridium estertheticum is an anaerobic, psychrophilic, motile, and spore-forming Gram-positive bacterium. It tolerates cold temperatures and is characterized by its rod-shaped structure. This bacterium is known for causing blown pack spoilage (BPS) in vacuum-packed meat, even in the absence of temperature abuse. Over the past 30 years, BPS caused by Cl. estertheticum has been reported globally and poses a significant economic challenge for the meat industry.
